I’m back with my second submission for the Steviva “Sweeten it up” blogger challenge. This time, I crafted up this yummy low carb apple pie protein shake using the MonkSweet+ sweetener. If you missed out on my sugar-free slow cooker barbecue ribs a few weeks ago, I went into detail on that post about the blogger challenge sponsored by Steviva.

One thing my husband and I have missed enjoying on our keto diet is fruit. He especially misses apples and pears. We can indulge in some berries on occasion but have to do so in moderation. Berries are lower in sugar than other fruits, and even though they are naturally occurring sugars, too much can kick us out of ketosis.

My husband will usually drink a protein shake for breakfast and will sometimes throw in a few frozen strawberries or blueberries. Well since I know how much he misses out on apples, I thought I could concoct a low carb, low sugar protein shake that delivers a nice apple pie punch.

While the low carb apple pie protein shake does call for apple juice, I have used such a small amount that I think will be just fine for our ketosis. I also added in some chia seeds for fiber and heavy cream for extra fat. If you aren’t a fat burner though, you could totally leave out the cream and just add some extra cashew milk. It would save on the calorie count too!

What makes this low carb apple pie protein shake extra amazing is the MonkSweet+ sweetener. It’s a blend of monk fruit, stevia, and erythritol. It adds a subtle sweetness to the apple pie flavor, and dissolves in the shake so nicely! And it gives the shake just the right amount of sweetness to make the apple pie flavor really pop.
It tastes just like you are biting into a big piece of fresh apple pie! Here’s the recipe:

Ingredients

  • 1 cup unsweetened cashew milk
  • 1 tsp MonkSweet+
  • 1/4 cup 100% apple juice no added sweetener
  • 1/4 cup heavy cream
  • 1 tsp chia seeds
  • 1 scoop Vanilla protein powder
  • 1/4 tsp apple pie spice
  • 1/2 cup ice

Instructions

  • Add all ingredients to a blender and pulse until blended
  • For an iced shake vs. frozen, omit ice from blender and serve shake over ice instead

Notes

 You can substitute more cashew milk for the heavy cream to save fat and calories bringing it to 277 calories and 12g fat.

  1. I like all things apple so I know I’d enjoy this. I really need to follow that Keto diet! You have had made some yummy food on that diet!
