It’s Monday already! Is it just me or does the weekend always seem to fly by? I am so ready for it to cool off here in South Texas, but there doesn’t seem to be an end to the 90+ degree weather in sight. This week is all mid to upper 90’s and no chance of rain what so ever! I have a few painting projects that I want to get going on, but with the high heat and high humidity, it doesn’t make painting go well. So frustrating!!
Grocery shopping this week was actually pretty enjoyable. H-E-B had whole chickens on sale for $0.77/lb this week(as well as some great deals on marked down brats, and ground beef), so you know I snatched a few of those babies up. I love roasting a whole chicken, and then using the leftovers in meals for the rest of the week. It makes life so much easier on busy weeknights. The shredded chicken works well in Quesadillas, soups, and on salads. Plus we like to eat the breast meat on sandwiches for lunch.
Here’s what’s on our meal plan for the week.
Monday– Beef Stroganoff, salad
Tuesday– Crock Pot Lemon Chicken, wild rice, green beans
Wednesday– BLT’s, cottage cheese, broccoli and cauliflower
Thursday– Crock Pot Southwest chicken over rice
Friday– Leftovers or Salad
Saturday– Flatbread pizzas
Sunday–Rotisserie style chicken, mashed potatoes, corn
