It’s Monday ya’ll! Another week has flown by and I’m back with yet another weekly meal plan.
For the next several weeks, I am going to be so super busy. I was working part time, but ever since getting back from our trip to Mexico, I’ve been working full time. That means my only weekday off has been Monday where I used to be off on Wednesday’s too. But, not only will I be working full time (plus overtime with some of my coworkers being on vacation) but I’m also taking a few evening classes. I know, I’m a little crazy right?
Because of my hectic schedule for the next few weeks, my meal plans will definitely focus on EASY and QUICK meals. And on Monday’s, my husband will be fending for himself since I won’t be home to cook. For him that means a lot of leftovers or salads. Please bear with me for the next several weeks as I try to handle a full time job, evening classes, AND a full time blog. Whew! I’m tired just thinking about it all…
Monday–Leftover pot roast (for hubby)
Tuesday–Grilled chicken salad
Wednesday–Spaghetti (for hubby)
Thursday– Crock Pot Buffalo chicken sandwiches and steamed veggies
Friday– Mini homemade pizzas
Saturday– Hamburgers and oven fries
Sunday– Chicken Enchilada pasta (recipe soon!)
