Did you know that August 10th is National S’more Day? Yes, there is an entire day devoted only to a campfire dessert! I learned this last year, but sadly just a little too late to share a fun new recipe. Since then, I’ve been throwing around ideas in my head trying to come up with a dessert that pays homage to the traditional s’mores treat that I enjoyed many times over a campfire as a kid. Finally, I have the perfect recipe to recreate that campfire experience without even leaving the house.

How to Make S’mores Poke Cake

Thinking about s’more brings me right back to my childhood. More often than not our family’s summer vacations meant camping with my aunts, uncles, and cousins and we always had the ingredients to make s’mores. Always.

Ingredients for S’mores Cake

  • 1 box Devil’s Food cake mix plus ingredients needed to make it
  • 7oz container of Marshmallow cream
  • 2 cups graham crackers broken up into small pieces
  • 1 cup mini marshmallows
  • 1 cup mini milk chocolate chips

Steps for S’mores Poke Cake Recipe

  • Prepare and bake the cake as directed on the box.
  • Once the cake is cooled, poke holes all over the cake using the handle of a serving spoon or large skewer.
  • Spoon the marshmallow cream into a medium-sized microwave safe bowl and heat for 10 seconds at a time, stirring well after each heating cycle, until the cream is runny. This will make it spread and run down into each hole.
  • Use a spatula or butter knife to spread the marshmallow cream over the top of the cake.
  • Sprinkle the bits of graham crackers over top of the marshmallow cream.
  • Top the cake with mini marshmallows and mini chocolate chips.

How to Store S’mores Cake

If you have leftovers of this delicious s’mores poke cake, it’s best to store it in the refrigerator in an air-tight container. Keep the cake up to 1 week in the fridge.
