Hi friends! I am so ready for January to be over. I know that is a weird thing to say, but I just feel like this month has been so screwed up. I guess it’s because I took a little blogging vacation, and a real vacation this month. Whatever it is, I’m ready for February and new start (and projects!)
My husband and I are challenging ourselves to lose weight–again! I even started a “Biggest Loser” challenge at work to keep the momentum going. It starts today and lasts for 8 weeks! I work with some pretty competitive people, so I’m sure it will be interesting to say the least. My biggest challenge will be kicking that stupid soda and sweet craving–AGAIN! How many times must I do this to myself?
Anyway, here is what’s on our meal plan for the week! In addition to dinners, I’ve also made up several smoothie packs for breakfast, and plan to do salads or rice and veggies for lunch. My husband usually eats granola, fruit and yogurt for breakfast and a sandwich for lunch.
Monday–Healthier Beef Soup
Tuesday– Southwest salad with Guacamole and salsa
Wednesday– Asian Garlic Noodles
Friday–Homemade veggie pizzas
Saturday– Noodles and Veggies in Peanut Sauce
Sunday–Grilled chicken breasts, quinoa, steamed broccoli
