We did pretty good with sticking to our plan last week. There was just one hiccup. I forgot to cook my black beans ahead of time for the Santa Fe Chicken! Oops.
I thought this week I would skip telling you what we are having for breakfast and lunch. It’s the same every week! Instead, let’s focus on dinner.
So what are we eating this week?
Monday– Chicken Fajitas
Tuesday– Slow Cooker Sticky Chicken, green beans, baked potato
Wednesday– Crock Pot Italian Beef
Thursday– Santa Fe Chicken over brown rice (I’ve got the ingredients this time!)
Friday– Leftovers
Saturday– Smoked Pork Roast (in our new trashcan smoker my husband made!), macaroni salad, asparagus
Sunday– Beef Stroganoff

We used to do meal plans all the time. Not so much lately. I really need to get back to that.
I saw you post and said, if I blogged about what we were eating maybe I would be more consistent with the meal plan. Thanks for the inspiration.

Amanda, I admit, I have a weird meal plan system…I make from what I have on hand ( we have plenty of our own grass fed beef, bones and organic chicken) , but I plan to shop so that I have a wide variety of veggies and fruits always ready to go. We are doing GAPS to heal our gut and so I can get back on dairy on day. I think that 2 – 3 months of GAPS and I will kick my dairy allergy (once my leaky gut heals). We cut out almost all dairy and some grains unless it is sprouted bread and all feel so much better. God bless your diligence as a mother. Stand firm!
