Another week has flown by! I hope all of you moms out there had a wonderful Mother’s Day!! One of my four legged children rewarded me by chewing a hole through one of our large water jugs we have stored in our laundry room. Imagine my delight when I came home from the grocery store to find water all over. He loves me.
Speaking of the grocery store, it was so easy to make my shopping list this week since I planned my meals for the entire month of May last weekend. Now all I have to do is look at the calendar, and my inventory sheets and go from there. Meal planning at it’s finest!
We do have one event this week that doesn’t have a meal to go along with it. My husband’s birthday is this Wednesday, and since the question “what would you like for your birthday dinner” was answered with an “I don’t care” I have yet to decide what to do for it. Maybe I’ll surprise him by making him PB&J sandwiches. That’ll teach him 😉

- Tuesday– Black bean burgers with sweet potato fries
- Wednesday– something special for hubby’s birthday
- Thursday– Spaghetti and meatballs with garlic bread
- Friday– leftovers
- Saturday– Baked chicken wings, baked potato
- Sunday– Coconut shrimp, corn on the cob, quinoa
