head of cauliflower
, cut into small chunks

salt and pepper to taste
Instructions
Place chunks of cauliflower in a food processor and process until it resembles rice.
Place a piece of cheese cloth or other straining cloth over a large bowl. Pour riced cauliflower into cloth, cover and squeeze out excess moisture.
Heat a large skillet over medium heat and melt butter. Place riced cauliflower in skillet and season with salt and pepper.
Saute cauliflower for 5-7 minutes, until it starts to turn slightly golden and is tender.
Serve as a companion to your favorite meal, or enjoy it as is!
