Blueberry and Banana Bread

Ingredients

  • 1 3/4 cups flour I used 1 cup all purpose, 3/4 cup whole wheat
  • 1 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 cup butter softened
  • 1 cup sugar
  • 2 eggs
  • 1/4 cup Vanilla Greek yogurt
  • 1 tsp Vanilla extract
  • 2-3 ripe bananas
  • 1/2 cup blueberries

Instructions

  • Preheat oven to 350
  • In a medium bowl combine flour, baking powder, baking soda and salt-set aside
  • In a large bowl, cream together butter and sugar
  • Mix in eggs, one at a time, combining well after each
  • Add in yogurt, vanilla and bananas.
  • Slowly mix in dry ingredients and stir just until incorporated.
  • Fold in blueberries.
  • Pour batter into a greased loaf pan.
  • Bake for 45-50 minutes until toothpick inserted in center comes out clean
