Preheat oven to 350. In a 9x9 glass baking dish, add in carrots, sweet potato, cauliflower, onion and garlic. Add in broth until bottom of pan is just covered. Sprinkle 1/2 of the seasonings on vegetables. Place chicken breast strips on top of vegetables and sprinkle on the remainder of the seasonings. Pour broccoli pieces on top of chicken. Cover with foil and bake for 15 minutes. Remove foil and bake for 15 minutes more, or until chicken is cooked and vegetables are tender. Serve with rice if preferred.
