A few weeks ago, my husband brought home a giant container of homemade Chili con Queso dip a coworker of his had made.   It was SO good, we finished off that container in no time.  You know that unspoken rule of when someone gives you a container full of something, you give it back full of something else? Well, my husband insisted I make the guy some cookies.  Any kind of cookies.

Do you have any idea how hard it is to choose what kind of cookie to make for someone I hardly know?  I mean, what if he’s allergic to something.  What if sweets aren’t his thing?  What if he doesn’t like chocolate?  I know, I know, that’s absurd, but what if?

After quite some hemming and hawing over what type of cookie to make, I settled on something just about everyone likes.  Sugar cookies!

Since I was short on time, I decided to keep it simple by making sugar cookie bars, rather than chilling the dough and cutting out dozens of round cookies.

I topped them off with a thick, almond flavored frosting.  I mean, the frosting is really the best part anyway, am I right?

Overall these cookies are the perfect amount of sweet, with just the right amount of crunch.

Ingredients

For the Cookies

  • 2-1/2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter , softened
  • 1 cup granulated sugar
  • 1 egg
  • 1-1/2 Tbsp . sour cream
  • 1 tsp vanilla extract

For the Frosting

  • 1/2 cup butter , softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1/4 tsp almond extract
  • 1/2 tsp vanilla extract
  • Food coloring of choice (optional)

Instructions

For the Cookies

  • Preheat oven to 375 and grease a 9"x13" pan.
  • In a medium bowl combine flour, baking powder, and salt.
  • In the bowl of stand mixer, cream together butter and sugar.
  • Beat in egg until well incorporated.
  • Add in sour cream and vanilla until mixed.
  • Slowly add in dry ingredients and mix until combined.
  • Press batter into pan until spread out.
  • Bake for 15-20 minutes until edges turn golden brown.
  • Let cool completely before frosting.

For the Frosting

  • Cream together butter, cream and powdered sugar.
  • Add in vanilla and almond extracts, and food coloring if using.
  • Spread onto cookies evenly.
