Low Carb Meal Plan for May
Never question what is for dinner again! Each month I share a new monthly low carb meal plan that anyone can follow along with. Not eating low carb? No problem, most recipes are easily adaptable to suit any diets.

The month of May is going to be a busy one for us! It’s FINALLY warm enough that we can get out with our camper that we bought at the end of the season last year. We actually busted it out of storage (again) over the weekend and de-winterized it.
We have a trip planned every weekend in May, so our actual meal plan will look a little different than what I’ve included here. Sticking to low carb while camping can be a bit tricky and definitely takes some planning ahead. I don’t know about you, but I always feel the need to snack while we are camping, so I have to make sure we have something that is low carb friendly to munch on. If you’ve got any tips for me I’d love to hear them!
May Meal Plan
Week 1–April 30th- May 6th
Dinners:
- Monday– Beef Stir fry over cauliflower rice
- Tuesday– Lemon Chicken and Broccoli
- Wednesday– Mexican Chorizo Breakfast Skillet
- Thursday– Grilled chicken and cheesy cauliflower casserole
- Friday– Pizza! (we LOVE this fat head dough) Here’s a non low-carb deep dish version
- Saturday– Elk burgers, this amazing brussles sprouts recipe
- Sunday– Cheddar Brats with roasted broccoli and cauliflower
Week 2–May 7th- May 13th
Dinners:
- Monday- One Pot Beef and Broccoli over cauliflower rice
- Tuesday– Cajun skillet chicken with zoodles
- Wednesday–Tacos with baked cheese shells
- Thursday–Skillet Chicken Sausage and Veggies
- Friday– Cheesy Chicken Bacon Broccoli Bake
- Saturday–Cilantro Lime Chicken with salad
- Sunday– Grilled Lemon Pepper Tilapia with roasted zucchini
Week 3– May 14th- May 20th
Dinners:
- Monday–Oven baked chicken wings with roasted broccoli
- Tuesday– Chili Lime Skillet Chicken with zoodles
- Wednesday– Mexican Chorizo Skillet
- Thursday– Sheet Pan Cajun Shrimp and Veggies
- Friday– Low Carb Pizza Beef Rollups
- Saturday– Chili Lime Salmon with grilled asparagus
- Sunday– Grilled Pork Chops and salad
Week 4– May 21- May 27th
Dinners:
- Monday– Low Carb Corn Dogs and cheesy cauliflower casserole
- Tuesday– Lemon Chicken and Broccoli
- Wednesday– Tacos
- Thursday– Baked Chicken and Veggies
- Friday– Burgers, oven roasted broccoli/cauliflower
- Saturday– Cheeseburger Salad (with leftover burgers)
- Sunday– Grilled steaks and broccoli salad
