How are you getting through the stay at home orders and meat shortages? Over here in the Midwest, the grocery store meat cases are pretty bare, but we did manage to grab a pack of frozen chicken! It’s the little things that make us happy right?! We are very thankful that we filled our deep freezer with 1/2 cow purchase back in February before this all started, but I know that many families are not as fortunate. Luckily fresh produce is still easy to come by, so you can make that hard to find meat stretch a bit further during these times. Check out this post on how to stretch your meat further.

Week 1 May 4th- May 10th
- Monday–Beef Fajita Skillet
- Tuesday– Mexican Eggs and Chorizo
- Wednesday– One Pot Beef and Broccoli with cauliflower rice
- Thursday– Broccoli Cheese Soup
- Friday– Low Carb Pizza Casserole (can make this meat-less!)
- Saturday– Pot Roast with cauliflower instead of potatoes
- Sunday–Bacon Alfredo Spaghetti Squash
Week 2 May 11th- May 17th
- Monday–Lemon Garlic Chicken and Zoodles
- Tuesday– Grilled Chicken and Creamy Brussels Sprouts/Bacon
- Wednesday– Burger Bowls
- Thursday–Cheeseburger salads (burger on a salad bed)
- Friday– Vegetarian Pizza (with these crusts)
- Saturday–Mini Meatloaf with mashed cauliflower
- Sunday– Short ribs and gravy over mashed cauliflower

Week 3 May 18th- May 24th
- Monday– Chicken Broccoli and Bacon Casserole
- Tuesday– Cheesy Cauliflower Casserole (add a small amount of shredded chicken or bacon!)
- Wednesday–One Pan Chili Lime Skillet Chicken with cauliflower rice
- Thursday–Large salad with lunch meat and/or hard boiled eggs for protein
- Friday–Pizza Soup (this could also be made vegetarian or minimal meat)
- Saturday– Chili Lime Salmon with asparagus
- Sunday– Vegetable soup (just leave out the beef and sub cauliflower for potatoes)
Week 4 May 25th- May 31st
- Monday–Philly Cheesesteak Skillet with Cauliflower Rice (make with ground beef too)
- Tuesday– Taco Casserole
- Wednesday–Chicken burrito bowls with Cauliflower rice
- Thursday–Bacon Cheeseburger Casserole
- Friday- Vegetable Lo Mein (use zoodles OR these noodles)
- Saturday–Air fryer Chicken Wings, roasted cauliflower/broccoli
- Sunday– Instant Pot Mexican Chicken Soup
