Crazy to think that it’s almost the end of September right?? My husband and I have experienced a whirlwind of weather over the last few weeks. We had beautiful Fall like weather before we left for our 10 day camping trip to Yellowstone. Then it went right back up to Summer temps the day we left. Once we got to Wyoming and Montana, we dipped down to BELOW FREEZING temperatures. Now that we are home it’s back to full on hot and humid! I am so ready for Fall weather and comfort food I can’t even stand it! That’s why our low carb dinner menu for October focuses more on comforting foods, rather than Summer salads and grilling.
